Hands off our Stilton cheese!

East Midlands Conservative MEP Roger Helmer today issued a robust call for an end to government interference in Stilton cheese manufacture, which could fundamentally damage this traditional product.
The Food Standards Agency (FSA) has proposed to reduce the amount of salt in blue cheese to less than 1.9%, instead of the typical 2.3%, which could have major implications for the way in which Stilton is produced
On a visit recently to the Long Clawson Dairy, Melton Mowbray, Mr Helmer was given a tour of the production and manufacturing processes of Stilton, before getting a full briefing on the salt reduction issue. The problem is that the salt level in the process is not just about the taste, but also affects the growth of the characteristic blue mould that makes the cheese what it is.
The salt level in Stilton is actually lower than that in popular imported cheeses like Danish Blue at 3%and the French classic cheese Roquefort with a whopping 4% salt. Mr. Helmer believes that forcing a salt reduction on Stilton, while allowing imports of even saltier cheeses from the continent, would make a mockery of the EU's Single Market.
While supporting efforts by the food industry to reduce salt levels generally, especially in "recipe" foods like soup, baked beans or pizza, Mr. Helmer is convinced that the salt in Stilton is a vital part of the production process, and that the FSA's action is another example of ‘nanny state’ interference from the Government.
Speaking after the visit, Mr Helmer said:
“Stilton Cheese is part of our cultural heritage and a icon of Leicestershire so as a fan of Blue Stilton, I was delighted to visit the Long Clawson Dairy. However, I remain very concerned about government pressure on the industry to reduce salt levels, and I am writing to the FSA about it”.
“The salt in Blue Stilton is not just for flavour -- it mediates and controls the growth of the blue mould. Without the right level of salt, the wrong kind of moulds grow, which can lead to "off" flavours. Many people across the country feel that the Nanny State is out of hand. This is yet another example.”
